I love Spaghetti. It was one of the first things I learned how to make. Pretty hard to screw up boiling water and pouring out a jar of sauce. I’ve since upgraded my sauce situation and here is what I made for dinner last night.
Spaghetti Sauce
5 cloves of crushed garlic ( I love garlic, you maybe not so much so use less)
1 medium red onion diced
1 zucchini diced
1 cup of mushrooms diced
1 lb of grass fed meat
1 Jar of Trader Joe’s Organic Tomato Sauce
Boil some water for your noodles. I have been really into brown rice pasta, you should give it a try!
Heat a pan with olive oil and saute the garlic, onions, mushrooms, zucchini. Set aside.
In another pan get some garlic going and add the meat, cook it thoroughly. Drain any excess oil then add the meat with the sauteed veggies. Pour in the jar of sauce and what you have is “crack sauce” as my friends call it.
Roasted Golden Beets
I think one of the most underrated vegetables is the beet. They are so good roasted and one of my favorite side dishes. They are a pain to peel, but so worth it.
1 bunch of beets, peel and dice into cubes
2-3 tablespoons of olive oil
5 cloves of garlic
1 cup of brussels sprouts, cut into quarters
Dash of salt
Preheat oven to 400 degrees. Toss the beets, brussels, and garlic with olive oil and salt in a bowl then place on a baking sheet. 20-25 mins. in the oven and you have a golden side dish :)
Purple Kale Salad
1 bunch of kale, trim, wash, cut into small pieces
1 cucumber
2 tomatoes
1 avocado
Makes a great easy salad packed with healthy omega fats, antioxidants, and fiber!
